Legal Requirements for Getting Married Abroad

Does anyone know of a site where we can easily view the legal requirements for getting married in various countries and that inform as to the legal standing of those marriages in Ireland?

Background: We're both Irish citizens, non-religious and want to have a small, intimate wedding abroad to avoid the huge costs, ridiculous restrictions and family hassles (and unreliable weather!) that we've discovered would come with trying to get married here. Registering here and then having a ceremony abroad is something we're only going to look at as an absolute last resort as, in our opinion, the entire ceremony is pointless if it's not our actual wedding - i.e., we want our wedding day to be our wedding day ;)

We had initially been looking at getting married in Ibiza as I know the island very well, speak Spanish and have family & friends living over there who could help organise things for us but, legally, we could only do it if one of us was either a resident or a christian. So we've started looking at other countries, but trawling through Google as we think of each country, looking for the legal requirements is proving a bit tedious (and often UK-centric) so we'd like to come at it from the other angle of being able to easily see all the information we need for various countries is one place and pick our location accordingly.

So, back to the original question, does anyone know of a website that has such information? Or would we be better off making an appointment with the Department of Foreign Affairs when we apply for our Certificate of Freedom to Marry and allowing them to advise us?

Also, if anyone has personal experience of getting married abroad without registering here first, we'd love to hear your insights on the legal processes involved :)

UPDATE: Found this website, which is exactly what I was looking for. It is a UK site, though, so if anyone knows of an equivalent Irish site, please let me know, just in case there are any differences in requirements for us getting married in a particular country or having the marriage legally recognised here.
