Protein in bread?

    I make all my own breads, mainly sourdough. I use very strong bakers flour or Italian 00 flour. My intuition tells me that this is a much better product than standard white bread - the strength of the flour is a result of the high level of protein for example.

    And yet today, I was checking this out in fatsecret.co.uk and they say that while the protein is marginally higher in sourdough the calories, fat and carbs are all lower in plain white bread.

    Say it aint' so.........
