Crab Claws

    I bought a kilo of crab claws (still in their shell) in Howth over the weekend. Normally, I smash them with a hammer to crack the shells and fry them in garlic oil. The problem with this is as I'm turning them on the pan the shell is cracking off so I end up spending more time picking shells from the dish than eating them.

    Would anyone have any suggestions as to some alternative recipes or alternative ways to get to the meat.

    Crab is hard to process but worth it, beats lobster hands down for me.

    Bring a pot of salted water to the boil, put the claws in and bring back to the boil, turn down to simmer for 2 minutes and drain.
    Put the claws into ice cold water until they are cold.
    Drain and use or refrigerate.
    If you leave them to cool after they are boiled they tend to end up dry and overcooked as the shell holds a lot of heat.
