If I were to take my pet cats to Poland, do I need a pet passport? Whats the procedure? Would highly doubt I would be coming back to Ireland unfortunately.

Yes you'll need a pet pass port, chipped and fully vaccinated after they are chipped along with a few other things as per the link. Also look at what airlines you can fly with and what they require (it varies greatly).
