Why did you give €2000 if the deposit was €1500? Mistake number one. I don't see why they'd give it back if you've just changed your mind, how long between paying it and wanting it back?

This is a tough one, normally a deposit is taken at the time when contract is signed, so T&C's are in the contract. It will really depend on the hotel, handing over the deposit means you accept the T&C's of the hotel, the fact that you didn't see them is, unfortunately, irrelevant. You should have asked.
What is your reason for wanting to cancel the wedding. If you have a genuine reason then you might get some leeway, but if you just want to go with another hotel, then unfortunately, it maybe a very costly mistake.

Before anyone jumps to "bad business" "they done nothing for €2000" etc etc, please look up "deposit" in a dictionary and understand what it means before replying. For the record, I would return the deposit if no contract has been signed.

Deposits are usually non-refundable. If you've changed your mind, then I'd call the venue back and explain BEFORE the contract's issued. Don't be surprised if the answer's no...

Could simply be "buyers remorse" OP.

We paid our €1,000 the other day and I have the signed contract which I have to hand in to the hotel tomorrow but I paid with my credit card on purpose to have Credit Card Insurance.

The hotel we chose "held" the date for 10 working days and if we hadn't given a deposit in those days the date would be released to anybody else so no deposit was needed straight away.

Some hotels say Deposits are non refundable and non transferable(cannot move date of wedding) but that's just legal talk. If the hotel is reasonable then they "could" return your money so long as they haven't booked anything or turned away that date in the meantime.

If you felt pressured on the day then tell them that.
