    I thought it'd be handy to have a thread in this forum for healthy recipe ideas.

    I'll get the ball rolling.

    Oven Baked Potato, Chorizo & Feta Fritatta
    8 Eggs
    100g Chorizo
    100ml Milk
    100g Feta
    100g Baby potatoes cooked
    Chopped parsley
    Salt & Pepper to taste
    Coconut oil for frying.

    1. Preheat your oven to 180. Grease and line and oven dish (I use a loaf tin)
    2. Fry your chorizo till nice and crispy.
    3. Beat eggs and milk together with the herbs
    4. Scatter the baby potatoes and chorizo into the oven dish, then pour over the egg mixture followed by the feta.
    5. Put in the oven for about 20-30mins until the frittata is just set.
    6. Serve with a big green salad.

    *I'm aware that everyone has a different opinion of 'healthy' but just lets go with a theme of a decent amount of protein, and something that's not heavily reliant of processed foods.

    Im gonna post these just to help the thread get started. Got them from https://www.facebook.com/FitnessRecipes I think.

    Banana pancakes (no flour)


    1/2 banana
    1 egg
    butter for cooking
    fruit/syrup/greek yoghurt for serving
    pinch of cinnamon
    (protein powder optional) 25 grammes
    cocoa powder (optional) teaspoon full

    Mash banana with egg, then stir in the powders and cinnamon.

    Coat a pan with a thin layer of butter, medium heat and spoon the mixture, cook for a few minutes until it firms and goes golden brown, flip it over and cook the other side.
    Serve with sliced fruit and greek yoghurt, or syrup (i like it with blueberries and greek yoghurt)

    Sweet potato pancake

    1 whole egg,
    2 egg whites,
    150g of cooked mashed sweet potato.
    cinnamon to taste

    beat the eggs and mix into the mash, add a pinch of cinnamon.

    cook the same way as the banana ones, (roughl 2-3 mins each side) serve with fruit/syrup/greek yoghurt etc or bacon for a savory twist.


    Edit, Ive been eating the banana ones for around a year, they work really well. The sweet potato ones popped up on my facebook yesterday so this thread seemed ideal place to post them. havent tried them yet, but will do soon.

    Ingredients
    6 large eggs separated
    2/3 cup (150ml of a measuring jug) of Splenda *
    4 teaspoons of sugar- optional, but it really improves the flavour
    2 oz of cocoa powder (be sure to use real cocoa powder and not drinking chocolate etc)
    1 teaspoon of vanilla essence
    Frylight or Pam spray


    * NOTE- I advise using Splenda or another sucralose based sweetener suitable for baking. Avoid any aspartame based sweeteners as they don’t heat well and will leave a bitter taste.


    Method
    Preheat oven to 180c or 350f, spray a oven proof cake tin or loaf tin with Frylight or Pam Spray
    Whisk the egg whites to the soft peak stage and set aside.
    Place the egg yolks in another mixing bowl. Add the splenda and vanilla essence and whisk until smooth.
    Add the cocoa powder into the egg yolk mixture and mix until smooth. If it starts to get too stiff, add a little of the egg white mixture.
    Carefully fold the egg whites into the chocolate mixture with a metal spoon, the mixture should be an even milky chocolate colour with little flecks of dark chocolate.
    Pour the mixture into a standard cake/loaf tin.
    Bake the cake for approx 25 minutes until springy. Remove it from the oven but leave it in the cake tin to cool.
    The cake is lovely served with some fresh light cream and fruit or one of the following toppings


    Topping 1 (Optional)

    4 level tablespoons of light cream cheese
    1 teaspoon of cocoa powder
    1 teaspoon of vanilla essence
    sweetener (2 level teaspoons)


    Another thing I also do is include the zest of one orange before baking and you have a squidgy chocolate orange cake. I can vouch for it, it is yum :D

    1. Peel sweet potato and cut up in a bowl.
    2. Microwave full power for 7-9 mins (depending on your microwave and how mushy you want it)
    3. Add a scoop of choc whey protein and/or spoon nut butter and/or spoon coconut oil
    4. Mash it all up
    5. Go to town on that bad boy.

    Chorizo & chickpea stew

    1) Cut chorizo into discs and fry on a non-stick pan with no oil til the chorizo juices start to come out.
    2) Finely chop a large onion and fry in the chorizo juices. After a few mins, add some chopped garlic.
    3) Chop and add 2-3 sticks of celery. Add some paprika. Add a small splash of white wine.
    4) Once the alcohol evaporates, add a tin of chopped tomatoes and once bubbling, turn down to a simmer. Leave for 10-15 mins
    5) Add a tin of hydrated chickpeas and stir through. Serve.

    This was on a forum recently, cant remember where but if i do ill post the credit.

    Frozen bananas when blended go all creamy like icecream.


    1or2 bananas, sliced and frozen
    Peanut butter / or any nut butter.
    honey, syrup or similar

    take bananas from freezer and blend in a food processor. stir in nut butter and honey/syrup. return to freezer to re-freeze.

    You can also add any other ingredient, such as chocolate, nutella, other fruit. stir it into the bananas to make a ben and jerries chunky style or blitz it in the processor to mix it in.

    Chick pea Pancakes:
    • 2 eggs
    • 1 tin (220g) Chick peas
    • Chopped mixed peppers
    • Red onions
    • Mushrooms
    • Sprinkle of Cracked Black pepper
    • Sprinkle of mixed herbs
    • 1 tbsp of olive or coconut oil (for frying)
    -> Drain chick peas and heat in microwave for 1-2 mins and mash with fork. Beat eggs and chop veg.
    Beat all ingredients together inc pepper and herbs.
    Shape into round thick pancakes (i usually make 2-3).
    fry in oil for approx 5-10 Min's until golden brown.

    * you can replace or add any other veg or add meat. Quick and simple, tasty, healthy snack or meal.




    Chocolate Protein Mud cake
    • 30g Oats or almond flour or coconut flour
    • 1 egg white
    • 20g chocolate Whey
    • 1 tbsp cocoa powder
    • 1 tbsp Greek yogurt/cottage cheese
    • 1 tsp vanilla essence
    • half tsp baking powder
    • 1 tbsp stevia or splenda
    • 50ml Milk (coconut,almond, hazelnut - any milk will do)
    • 20g mixed nuts or raisins (optional)
    *if you don't have whey just add 15g of cocoa powder instead.


    -> Mix all ingredients together(expect for egg & milk). beat egg and milk in separate bowl , gradually adding to all ingredients. You should get a rough dough like texture.
    add mixture to bowl and heat in microwave for approx 2 mins.
    It will rise slightly and should have hard-ish texture on the outside and soft texture on the inside.

    *be sure not to add to much baking powder as it will rise significantly in the microwave :o

    *For best results use a hand processor. beating the crap out of all the ingredients will work too :p
