Sync with iTunes (which does a backup) and then click the 'Restore iPod' button.

Depending on the iPod and if it has iOS 5 or higher and iCloud then syncing will not create a backup. iTunes will tell you if iCloud is managing the backups or not

If it's running slow then try a hard reset before going through the hassle of a restore.

Works for me all the time.
