cover a cake

    I need to cover a chocolate biscuit cake with fondant, I usually only use sponge but this person wants chocolate biscuit cake. Do I need to ganache it or should I Buttercream it so that the fondant sticks???

    Ganache is probably better, however if the surface is smooth and you don't need the ganache to fill any dents and hollows then you can just put the sugarpaste straight on. CBC is usually sticky enough for the sugarpaste to stick straight to, especially when it is out of the fridge a little while, as it comes back to room temperature it gets quite tacky on the outside.

    I sometimes just run the blowtorch very lightly over the surface if I think it is not sticky enough, a hair dryer would do the same job.
