Would photocopies of them be good enough or would you recommend bringing the originals. Im only going for 1-2 years at the moment

Some places (particularly for jobs where you are actually going to rely on your degree or qualifications) require originals or certified copies. For a certified copy you basically pay some guy money to photocopy it and say "this is definitely a copy of the original". You would be wise to take one with you and maybe leave one at home for someone to send on if yours goes AWOL. It would be a pity to miss out on a job because you didn't have the paperwork to back it up. Of course if you are going for casual labour then this won't be as much of a problem.

You might also want some sort of rental accommodation reference to show you are a trust worthy individual.

I don't know if you are in any clubs (golf, sailing, GAA, other) but it can be no harm to bring a letter from them saying "activityyup has been an enthusiastic member of this club for X years and has been a linesman for club level games". If you are really lucky then your club (especially sailing ones) might have a reciprocal arrangement with a club where you are going . . . basically you get to use their facilities for a while as a visitor.

This might sound obvious but if you are bringing electrical equipment that needs charging, bring an adapter if you're moving to a country that uses 2 pin sockets. You can buy these at the airport but they might be cheaper in your local electrical shop.

If you're moving to a place you're not familiar with, and English isn't the first language, buy some good maps and guidebooks here before you go. You'll be able to buy them locally but they might not be in English.

    Where are you heading ?
