Not sure Sirius is still open, seems closed every time I'm out that way.

Dunmore marine supply is probably Jophy's place in Dunmore, great guy, one of the lifeboat men, and basically the whole man, but the shop is more geared to the trawler men then leisure boaters, lots of huge shackles and anodes as long as yer arm!

Deevys is primarily a motor factors but they do a good range of marine stuff too, from stainless nuts and bolts to actual boats, I think they are, or were a Bayliner agent.
Really nice guys to deal with and if they don't have what you want, they will get it for you by the next day. Ask for Mark or Chris Deevy.

The lads in the boat yard in New Ross, Stephen and Michael, have a limited selection of marine stuff, paints , cleaning stuff and the like on sale but they do have some connection to CH marine in Cork and can get you whatever you want.

Thats about your lot in Waterford!

I always thought that there is an opportunity for a dedicated marine store in Waterford, although That's what Sirius tried and it didn't work out. I spoke to the guy there a couple of years ago and apparently he tried a retail store on the quay in Waterford, but found it very difficult to make it work. At that time he also had the place in the industrial estate that is mentioned above.
I thought long and hard about dooing something myself a few years ago, but life got in the way. With hind-site it's probably just as well.
