I'm not sure many of the posters in here would be following a Paleo diet. You might have better luck in the Nutrition & Diet forum - I'll move this in there if you like.

If those ceramic frying pans are remotely like they seem on TV they'd be well worth getting I would've thought.

I use this one - but I use 1 tbls of apple cider vinegar instead of her 2 lemon juice.

This is a generally brilliant site anyway

You will be proud as a new mamma when you make your first mayo!
Just drizzle slowly, and even when it has come together don't be tempted to dump in the rest of the oil.
and do not use extra virgin olive oil! Aldi stock a very light one that is just right.

I made mayo with ACV once.. ew, hellmanns it ain't :)

My favourite stick blender mayo recipe involves extra light olive oil, colemans mustard powder, dash tumeric and spirit vinegar (you can get this in an asian food shop, also called white vinegar). That's the closest to hellmanns but not exactly the same.

I love my pressure cooker - means I can pick up the cheapest of meats in the reduced sections or things like ox tails, ham shanks at 4pm and still have dinner on the table for the kids before 6pm.
Great for 10 minute soups too. Or when DD demands bacon and cabbage & it takes just 45 minutes (with spuds and cabbage all cooked in same pot)
I'm not big into forward planning so my slow cooker gathers dust ;)
Silicone muffin thingies from the euro shop - for meat muffins, my latest breakfast must have - tried them in the muffin tins and they made a mess. Also did my own version of nak'd bars but made into balls in the muffin case then drizzled with 85% choc - keeps them in handy sizes (I did a dozen then took them out of cases put them in an ice cream tub into the freezer - great to throw in my bag if going out or gym as nicely defrosted by then)
A good food processor - mine wont make coconut or butter :(

I adore my pressure cooker too, it really is essential for the impatient cook.

I can cook a melt in the mouth beef bourguignon in around an hour where it would take about 6 hours to get the same meat tenderness conventionally.

I make goulash, chilli, stroganoff, curries all on a Sunday and my food for the week is cooked.

It's also makes chicken and beef stock in a fraction of the time.

I think the minimum would be
A few saucepans with one large one.
    Blender/food processor.
Sieve if your doing things like bonebroths and I'd highly recommend paying good money for a steal one
Frying pan ideally cast iron, I've been looking for one of these but can't find it anywhere a stainless steal one would be good as well if your going to add in acid based sauces
    Roasting tin
    Tupperware
    Chopping board
    A pairing knife/a pairer
A chefs knife for general stuff
    A carving knife

That's my minimum, you can get by without the fancy stuff but they are nice to have. I bought a stock pot a while ago, it's massive and I love it, I did the christmas ham in it and it made the ham look tiny! I did an ox tail stew in it a while ago and I'm still eating it there's so much that can go in. It's great for broths and stocks and it can go into the oven. It cost me €80 and that was on sale but it was well worth it, maybe not for other people but I use it a good bit and I knew I would.

Pressure cooker is a good one. Nomnompaleo uses one a lot.

Another great one is a julienne peeler for making "zoodles" ie spaghetti out of courgettes. They have them in kitchen compliments in town or homestore do a Jamie Oliver one.

Great ideas! I think you'd need to go into mega bucks Vitamix territory to get a blender that powerful :(
