Winter break ideas, family with 4 kids

I work in the seasonal food business & as such can't take summer or easter holidays. We normally take the kids out of national school for 2 weeks in Oct & head to Lanzarote, Playa Blanca, which we all love.
...Just as a BTW, we get a heads up from their respective teachers as to what workbooks they should be keeping up with & bring books with us...
But as they progress into secondary school we don't want them to miss out on school, so we need to look at our plan for this year.

Keeping to the school calander & looking at last years scheduled flights during the October school break we would have only really got 5 days in Lanzarote if we opt for only 1 week because flights arrive late & leave early. That doesn't offer great value for money in my mind. Last year our flight accommodation costs were €550 for flights, +€300 for bags/seats (which was great value for 6, I kept an eye on the ryanair website almost daily & booked the day the Knock winter flights became available) & €1500 for 4bed villa for 2 weeks. So I guess we are in the €2500 for flight & accommodation bracket. We would like 7-10 days anywhere within reasonable distance, for family with 4 kids 3/7/10/12, it doesn't have to be a sun holiday & new experiences would be looked at but would have to offer something for all kids...plus mum & dad! Is that possible? Schools close Fri25 Oct & re-open Mon 4th Nov this year or any other school holiday time would be concidered excluding xmas, so if anybody has any ideas/experiences please post.
    Cheers!
