How's my diet?

I realise there are hundreds of these threads already, but I would like the advice of the Boards member-base. Here's what my average daily diet amounts to:

Breakfast: 3 scrambled eggs on toast (wholegrain toast, real butter) and a glass of milk or orange juice. Alternatively, I'll have some oats (rolled oats microwaved in milk).

Lunch: Tuna (140g) and mayonnaise sandwiches (two sandwiches, again on wholegrain toast with real butter) and a pint of milk. Alternatively, I'll have an omelette (5 or so eggs, mushrooms, scallions, baby tomatoes, ham, maybe some diced grilled chicken, and a few other bits). 3 times out of 4 it's the tuna option, though.

Dinner: Two grilled chicken breasts, or a fillet of baked salmon, with broccoli, green beans and a couple of baby potatoes. Again, with milk.

Snacks: fruit, oats (i.e. porridge), natural yogurt, soup.

I'll also drink at least 2 litres of water each day. I'll eat no more than 5 tins of tuna per week (aldi's pole and line caught in spring water, which, after some research, uses a species relatively low in mercury, so that's not a pressing concern, though I am conscious of it). I'm trying to get a lot of protein because I've been exercising regularly for the past 4/5 months. I've begun using a protein shake, so I can vary my diet a little more now and rely less on my staples: eggs and tuna, which I eat pretty much every day.

My main concern is the amount of bread I'm eating, which is, on average, about 6 slices per day; this is aldi's wholegrain (megatoast, I believe it's called), and is quite substantial in size: about 50g per slice. I want to cut bread down to a bare minimum, perhaps having 2 slices every second day, if even, but I honestly don't know how to replace it in two of my staple meals: scrambled eggs on toast, and toasted tuna sandwiches. What would you recommend? I would like to eat bread rarely - only a couple of times per week - but I'm at a loss as to what could replace it.

P.S. I'm young (early 20s), in relatively good shape (85kg at 190cm), and have no allergies.

    Thanks.

    What's your goal?

Breakfast bread could be replaced with bacon.

Lunch bread could be replaced with a bucket load of salad.
