White patch makes me think stoat but as for the the way it's back is presented it could be any of the family ( not a ferret as ferrets would stop and look at you and wouldn't move away that fast)
So could be any member of stoat family minus weasel as not in Ireland
    What size was is roughly

is there much size diffrence in ferret and stoat??to me it was a slim like a ferret maybe longer though..ive seen plenty of ferrets never seen a stoat in the wild so hard to match the sizes in my head..and i dnt realise we had no weasels in irl..what about pine martins?although they are more woodland aint they?.and this is scrub/farmland/lotsa rats.

Stoats are smaller than ferrets i think, they only average about a foot in length if i'm not mistaken. Pine marten's and mink are both twice the size of a stoat I think.
Going by your desciption of the colouring I think ferret is unlikely.

Longer than a Ferret, black with white patch on chest, has to be a Mink so.

Ferrets wouldn't be much longer than a foot in length either I've one there that's barely a foot she's very small
    I'd say it's prob a mink
