Have two cables running direct from diseqc switches to humax box. Eveerything sound there
I'm thinking of running the cables to a wall plate and then use short cables to connect to sat box.
Would this split in the cable affect signal strength or quality?

what kind of wall plate? If its a good one, then no it won't affect signal.

Or you could remove the gubbins form a standard TV plate , drill in some 11 mm holes and put a F connector in line coupler in the plate.
