Red oil light on a 2001 Golf 1.4 petrol

This light came on yesterday and I panicked, thinking that it must have been dry. I stopped and dipped the oil, but it was fine, sitting nicely in the middle of the dipstick guide.

So next I assumed that it might be a faulty sensor, but I searched the net and it looks to be an oil pressure warning, not actual level.

Is oil pressure serious in an engine?
Would it need checked out or should I try getting sensor changed first?

Get the car probably diagnosed before spending money on changing parts that may not be the source of the problem. Given the track record of that VAG 1.4 litre engine I'd get it looked at promptly.

I researched this when the orange oil light came on in my golf. Orange is low oil. Red is low pressure. I theres no oil pressure the engine can get starved of oil leading to complete failure. I'd get it checked ASAP. Might be a faulty sensor but it's not worth the risk

Low oil pressure is bad news.

The oil pressure switches do give a bit of trouble on them. However the engines themselves are also prone to low oil pressure problems. So I would suggest you get a pressure test done and then if that checks out ok then replace the switch.
