I've never used a CIE intercity bus before, and will be doing so for the first time on Monday.

My question is .... can you hail a CIE bus between official stops by just putting your hand out? I'll be on the N2 which is a wide road with a hard shoulder.

I don't think you can guarantee that a private operator will, given that they come under the same stop licencing rules Bus Éireann do. Not saying they won't, but I wouldn't count on it.

from experience of the old bus eireann 004 route through naas castledermot and kilcullen comparing it with the jj kavanaghs route the private buses have far more legitimate stops than most bus eireann services on the same routes.

Kavanaghs stop at several places like crosstown, moon high cross, timolin, kilsheelin, nurney etc etc along the old 004 route similar to a stage carriage service.

I rang Collins Coaches and they said the I can hail the bus at any point if it is safe to pull in and stop.
This does not apply to their express service which uses the M1 and the port tunnel.

Similar arrangements tend to apply to BÉ.
