What does this do? (Removing thin end of drumstick)

    Was looking at a recipe involving drumsticks and one of the steps was to
    Cut the chicken into drumsticks and thighs and remove the thin end of the drumstick to expose the bone, clean the bone by scraping the meat half way down towards the thick end of the drumstick
    Sounds kinda random, is it just a cheffy thing to do?

    I think so. It's like the way they scrape the meat off the bones of a rack of lamb for presentation. Personally, I think life's too short :)

    Just a version of French trimming. Can also help chefs in a busy professional kitchen move the meat around the pan/from pan to plate quickly without having to use utensils.

    A waste of good meat in my opinion. Especially when done to a rack of lamb. I love nibbling those crusty strips of meat off the bone. :)
