i've recently started having omelettes for breakfast or lunch..but i've noticed that when i'm frying up the non-eggy ingredients beforehand they look bloody delicious on their own

would it be terribly unhealthy to just.. fry up some spinach, mushrooms, pepper, tomatos and various other vegetables in the morning and have as breakfast as well as having the same stuff+eggs in the afternoon for lunch?
I use coconut oil instead of.. whatever the normal cheap stuff you buyin supermarkets is.. sunflower?

the ingredients themselves are fine im pretty sure as part of a balanced-ish weight loss diet, im mainly asking about the frying them... two times in a day

am I better off just sticking with omelette in the morning and a different non-fried salad for lunch in the afternoon or will it not make much of a difference since i'm not exactly deep frying a massive load of chicken nuggets and chips

Should be fine as long as you're not going overboard, and it all fits in with your calorie requirements

Sounds like a plan! The most important thing here is to continue to use the coconut oil and just be absolutely sure that it is the pure virgin kind , I reckon you have given me an idea!

cool stuff :) I only use a teaspoon of coconut oil (and it is the virgin kind.. got it in superquinn on the reccomendation of people in the coconut oil thread on the Health/fitness forum) and all the rest of the stuff seems fairly calorie light.. which is why I pile on loads of it :)

Hey don't worry about using too much coconut oil, I lash it on! And since its a great way to get good fats from your diet I see no harm in it. Infact since I have used more of it in my diet my weight has plummeted! I can even be found licking the spoon after I put it on the pan I must confess. It's really great stuff!

well I take a tea spoon of it in the morning too, figured i was probably a bit low on fats in my diet and lots of people were raving about it on the other forum so figured why not.. it's quite tasty .. like coconut flavoured wax.. but in a nice way :)

i sometimes take a teaspoon in the afternoon too but generally just the one

If you're leaving out the eggs, it might be a good idea to throw some meat in with your fried veg. Maybe chop up a bit of chicken or turkey breast and fry it in the pan with the rest. Gets a bit of protein into you.
