    we dont have cold enough winters. I beleive you need sustained tempatures under -6 degress C for the trees to send the sap down the trunk

    parents have a red leaf canadian maple in the garden so looked into tapping it.
    the green leafed maple tree is the one to tap while you can tap a red.

    Anyway its more the regular changing of cold temperature to a less cold temperature that gets the sap running in the winter.
