In the bachelors in commerce is the Spanish for beginners module difficult or is the skills to succeed/business law module easier?

I don't know, they have no information on their site, that I can find, on what you will be studying in each in terms of how in depth and how difficult the exams will be

I always find it strange when people try to decide which classes/courses to take based on how easy they are. Surely you should be choosing whichever one fits your career path best and then out in however much work it needs?

I'm with Zillah on this. Obviously there's not any information regarding how difficult the exams are or how in-depth it is on the web, do you think that people rate courses on how handy they are? Which one do you actually like? Which one do you think will be the most interesting? Is there one that you would actually find useful, not only regarding your future career, but personally too? These are the questions you should be asking yourself when making such decisions — you'll do what you want, but doing it that way will be more rewarding.

Also; they are all easy exams if you know the answers, you're just responsible of knowing them.
