Apparently there are plenty of good cycle routes and HILLS!!! I've never been up there but anyone I know that has reckons there's great cycling up there. Try looking for the route of the Donegal sportif - sorry I don;t know it's name. A cracker by all accounts

You could do a Bundoran - Manorhamilton - Sligo - Bundoran loop around the lakes, be a nice bit of road with good scenery and some climbing.

I'd suggest having a look on MapMyRide & work out a couple of routes as its all depends on the time you have available and the work you want to do. Be also work emailling the clubs in the area to see if you can jump onto a club spin.

This is the route I did in November when I stayed in Bundoran.

Was nice enough until I got a puncture 10km from home.

You could also do a loop around Lough Erne.

If you do the loop round the lakes take the Rossinver --> Kinlough Road and drop in at the Organic Centre. lovely coffee and cakes and nice views on the road too. Makes me want to move to Leitrim.

    Lough Erne your best bet.

Below is a nice route that I like to do that takes in Sligo, Leitrim and Donegal. Its mainly on quieter secondary roads. It takes in the seaside village of Mullaghmore, the horseshoe in Ballintrillick that will give you some fantastic views, up through Glenade again more fantastic views, on towards Manorhamilton, Rosinver where you'll pass the Organic Centre that was mentioned, then back along Lough Melvin in to Kinlough and back to Bundoran. Its just under 90km. Whatever way you decide to go you'll have a great time anyway! Enjoy! :)
