Ok, I think I am going to be offered a job. It's part time - mornings only. If i do get the job (please god) do I have to sign off as such or do I just not collect my dole next week? Or how does this work?

You will have to sign off,the max amount of days that you can work for and still be able to claim JS is 3.

The number of hours you do in a day dose not matter 1 or 8,it still counts as a day.

I know I won't be able to collect my dole - what I am asking is do I have to physically sign off or do I just not collect my dole? When do I stop collecting it? If I start working this Wednesday for example, am I entitled to collect my dole on Thursday?

Decided to give it 3 months so it'd look better on my cv but still hate it so going to make a decision on what to do soon..If your job is going to be part time I'd say go for it - my biggest problem is not having any flexibility so no chance of getting time off for interviews.
