All the threads seem to be about how much to donate to the church and gift to the priest - but when is this usually paid?

I think immediately after the church service. Normally the best man would hand over the envelope (as one of his expected duties) while the bride and groom are being congratulated at the door by guests leaving the service.

The risk of leaving it til later is that often priests will not attend the reception and creates a missed opportunity where it is difficult to get in touch with the priest again and create a temporary situation where he may think he was not paid! Usually, church organists and/or choir/soloists would get their fees at this time too.
