best summer sun for couple in late 20s

Just lookin for openions on this. we have a holiday planned for the last wk of july but cannot make up our minds where to go. lookin for some place fairly lively but not full of idiots that are just there for beer and party. also the prices seem to have sky rocketed in the ast 2 yrs or mabey its just because its the peak time. we have been in ayia napa before and really enjoyed it but i have read in reviews that it is party central during july which sounds a bit annoying and also that cyprus has gone very dear since the euro came in. was also looking at gran canaria, greece and mainland spain/portugal. we just want the basic apartment, few nice lively pubs/ restaurants, few activities watersports boat trips etc. good waterpark and mabey quad/ bike rental for a day to travel to nearby areas. any tips because budget/ falcon etc give very little good info on there websites about the resorts they are offering holidays in.
