Job seeking advise

Hi guys I'd really appreciate some advise.. I was made redunant on the 4th of May and decided to take 2 months off just to take a break - I had been working with the same company for 11 years so no clue about interviews. I've done 2 online fas courses, 1 classroom one last week and will be volunteering in a dog shelter up the road soon..

I was on a course last week that I'd booked thru work before I finsihed and was told
1 - Taking a break will look bad
2 - Changing directions in IT will look bad
3 - I'm crazy to want to change careers
4 - Taking a wage cut will look bad

 What do you think? The people on the course were a LOT more in to IT (and better paid) than I am and couldn't understand why I'd want to change paths. Things had quietened down in work for the last year or so and tbh I got used to not working out of hours/overtime and not having to worry about on call - I got my life back and I don't want to give it up again! :p Also I knew redundancy was on the cards so was very careful with money for the last year - I can afford to take a few months off.

I was a Sys Admin and don't think I want to be one any more - I've seen some jobs listed that I think I'd be good at for the same reasons I was good as a sys admin - if I explain why I think the role would suit me in the cover letter is this ok?!

Also last question - is it ok to apply to jobs where I don't meet all of the requirements - are they genuine requirements or are they seeing what they can get? I know when we were hiring for a junior position they'd have stuff on the job spec that we'd never dream of letting a junior do just to see who'd apply!
