I am keeping my options open but I am looking to get back into tour guiding within and outside Dublin. I did it a few years ago before I unfortunately joined the bank! I want to get back into it again as it was good fun especially when I did it in German. I know now that I need to get a qualification/experience before even being considered. Where would one go though? Irish Tourist board?

why don't you set up your own Tour Company aimed at german speaking tourists? I noticed in some of your other threads that you a willing to invest money into buying a cafe/bistro lease, all you need for a Day Tour Company is a website and a 12 seater bus. You could also buy an already existing business, there's one up for sale at the moment (top ranking on tripadvisor) for €25000 including mini bus and website.
Just be careful when buying the lease of a cafe as the turnover figures are always exaggerated and the fit out in terms of furniture and cooking equipment is always overvalued and ready for the skip. Also make sure the place has an extraction hood and grease trap, very expensive to install yourself. Just let me know if you want the link for the Tour Company that's up for sale or if you need any more advice on cafes/bistros/pubs.
I am a german Chef and have been working in Dublin Hotels and Restaurants for the last 12 years.
Viel Glueck und bis bald, Markus

P.S. I think the german themed pub is a brilliant idea, Dublin is defo ready for it !!!
