Planning a Holiday in the South of France: Advice Needed

I'm looking at a holiday in the South of France for two weeks in late October.
I'm not interested in: wine, not too pushed on traditional art museums and wouldn't go too out of my way for a beach (but could be nice for a day of rest).
Things I would like to see are: Old buildings, scenery / nice views, good walks

Currently I'm looking at something along the lines of the following:
    Toulouse - 2-3 days
Carcassone - Day trip (or overnight stay)
Montpellier - 4 days (seems a lot in this area judging on previous threads)
    Nice - 4-5 days

    from where I'd fly home.
I haven't seen anything notable about Marseille so I'm leaving that out.
    From the above:
Is Toulouse worth 2-3 days? Should I just fly directly to Carcassone?
Have I over- or unde-estimated any of the others? Seems like Montpellier and Nice have a lot of day trips but I could be going overboard. Or perhaps stay in a different town along that route as I tend to see places fairly quickly?

toulouse-visit the airbus/concorde visitor centre. this must be booked in advance.

carcassone-day trip is more than enough. nice old buildings, but quite expensive.

montpellier-university town with a nice feel to the centre, enjoyed it more than expected.

nice-buy a carte issabelle(spelling prob wrong) its a day rail pass up and down riveria. great views, and you can take in lots of towns in a few hours if you see places quickly as per your post.
