MY dad bought himself an iphone 4s directly from apple which was delivered but he lives abroad, he was asking me to set it up on itunes as he's home for a few days. I can just create a new user profile on my mac and set it up but he lives in Spain, if I set it up and select Spain as the country it just displays the page in Spanish. so question, if I set it up as an Irish iphone, when he goes home to Spain will that interfere with his itunes? or can apple care change this for him once he gets there?

If you set it up as Irish it will use the Irish apple store. However, when he wants to download stuff it'll probably be the same items in the Spanish ans Irish stores anyway.

It's the AppleID that becomes associated with a country. If he wants to change country he can just create a new ID for Spain. Set this one up as having no credit card, you can add that later.

Btw, you can, in intunes, change the country for an existing AppleID.

cool thanks for that, was just worried having it set up in one country would cause issues when he takes it home.
