    Hi Martin, Enzyme: Glucose Isomerase
    Substrate: Glucose
    Product: Fructose

Application: In soft drink industry, fructose is the sweeter sugar but also the more expensive sugar. So by using the enzyme glucose isomerase to convert the glucose into fructose they avoid the extra cost.

To change glucose into fructose you use Glucose Isomerase.
