the odds of a defender getting or creating a situation where he can score an OG?

I'd imagine it's not very difficult over 90 mins unless you're in a really strong team that's rarely under much pressure.

if he fails i'm sure it's not the end of the world and there's allowances for this in his payment or fixing arrangement.

Fairly high in fairness. A centre half probably clears 2 or 3 balls at least in a game from the centre of the goal about a yard inside the 6 yard box. Theres always room for one of those to be "misshit" . Theres plenty of genuine times it happens.
