Yes, you need one of the following:
-one of the monitors to have a display port connector
-an active displayport adapter - e.g., this or this. The cheap ones won't do.
-a specialised graphics card, such as Sapphire's flex edition

Viewing angles don't have to be anything special, you're not going to be looking at them at much more than 30/40 degree angle.

The biggest things for me re. Monitors for eyefinity would be the width of the bezel (thinner the better), and the type of stand-height adjustable is handy.

What GPU were you thinking about? Bear in mind with 5760 x 1080 res. you'll need a decent card with plenty of v ram or else an xfire setup.

For me, i was running 3 x 1680 x 1050 and a 6970 with 2 gb was good for 40 fps+ in most games at medium/high settIngs with low AA etc. even with a 7970 I have to trim back some eyecandy at 5040 x 1050. I'm holding off on the jump to 5760 x 1080 until I get a second GPU.

Monotype is right about adapters, you will need one active adapter at least, depending in the gpu(s) you choose. Most cards are now shipped with a few different adapters in the box. Go to newegg and find the exact GPU you are ordering-they usually show pics of every accessory shipped with it, that way you'll have an idea if you require additional bits.

Disable AA completely for highres performance. Single 6970 runs Skyrim at max settings (but without aa) @ 7680x1600.

X-Fire support for eyefinity only officially supported as of 2 weeks ago with new drivers btw... do NOT count on x-fire working very well for this. Best to get most powerful single card you can (7970).

Deffo get monitors with displayport - anything else is rubbish. You do not want to end up using adapters, they are quite expensive. Also note that some graphics card have mini-dp, while your monitor will have fullsize. Thus you need a dp-minidp cable for some cards, but a dp-dp for others. Monitors will likely come with dp-dp which may be no use.

Also, get monitors with a rotating bezel if possible. It's nice to be able to have the option. Unfortunately the larger monitors don't come with this, gotta buy a custom mount.
