Vegetarian Meal Ideas

    Hi, I am going to be cooking a meal soon for my OH who is a vegetarian and looking for some new ideas. Previously I have made stuffed peppers, veggie lasagne, potato gratin/bake, pasta/ pasta bake, roasted root veg & cous cous and while these are all nice I would like to make her something new. She is not a huge fan of heat or spice. I am an ok cook so nothing too complicated would be great. I was thinking maybe some sort of mild Thai Curry with tofu & noodles but open to other suggestions & starters too. Any help would be appreciated. Thanks

    Whenever I make Nigella's tomato curry with coconut rice, its always a hit and quite easy to make.

    Made this version of Thai green curry the other night & was very nice.

    It's really straightforward providing you can find all the ingredients & you have a blender to make the paste. You can tailor how spicey you want the paste — I used the three chilis mentioned in the recipe & didn't find it that spicey, mild for a Thai curry (although a big caveat — I really like spicey food :) & it depends on the type/ripeness of the chili you use).

    Don't really like tofu, but used just slightly harder vegetables that wouldn't go mushy — broccoli florets, carrot sticks, baby sweetcorn. Cauliflower is good too, or broad beans.

    Spanish omellete could be another good one?

    I had coconut rice recently and thought it was the nicest thing ever, will have to try this :)
