It all depends on what strand of Employment Law you are researching.

The Statutory Tribunals (E.A.T, Equality Tribunal, L.R.C) place their determinations and judgements on their respective websites. In the case of the Employment Appeals Tribunal, it is paramount that you have the case number, as the website's case-database is not easy to navigate without it.

For chancery matters related to Employment Law, the usual legal databases (BAILLI, LEXUS, JUSTIS) will contain all that you need.

From the point of view of textbooks, the consolidated books published by Meave Regan, and Corbett/Ryan are a very useful point of reference. Dr Mary Redmond has a very helpful book dealing exclusively with Dismissal Law, which contains plenty of EAT related caselaw. There are also a number of textbooks available on Sex Discrimination Law, the Transfer of Undertakings in Ireland, and the EU and Employment Law. These should be available in your library.

The following blog is run by the UCC Employment law lecturer, so would have interesting posts on the subject: link.
