My sister has just moved to Australia and will be travelling around for a bit. I want to get her something for Christmas, so I thought a voucher, but haven't a clue what would be best. Don't see Amazon there for example. Or what clothes stores are best? I need to be able to send the voucher to her by email.

Amazon have free delievery to Australia.

You could get her a "westfield" voucher. It's a shopping centre chain, she can spend that in virtually anything she feels like then.
