Contact your local VECs. They will have specialist adult courses. If not, Pearse College in Dublin has an adult LC class.

Don't forget at 23 you qualify for mature student entry to university.

It's not a secondary school, in that it does not have 12-18 year olds. Almost all their students are 18+, quite a few are in their 40s. They design their courses for people returning to education or those who for whatever reason didn't finish first time.
Apart from the LC classes they also have PLC courses, some of which are 'FETAC entry' courses to other colleges/universities, but if you just want to do the Leaving, you can do it there.

There is also Rathmines College, another CDVEC college, though their LC student profile would be a little younger with many repeats.

    Hi,
I am hoping to resit Higher level Maths in the leaving Certificate. I want to study myself, but how do I get registered and allowed to sit the Leaving Cert exam. I mean I cant just turn up the day of Leaving Cert Maths. Do I contact the Department of Education or the VEC or does anyone know how I should proceed or who I should contact?
    Thanks
