Blue Moon?

    Hi folks,

    Tasted a Blue Moon over the weekend and thoroughly enjoyed it. It had a lovely orangey sweet taste which I liked.

    Having said that I don't think I could drink it all night. It's more of a one or two bottles kind of beer. Anyway, I looked around for a few extract recipes and unsurprisingly most used orange peel and coriander with a standard wheat brew.

    Just wondering do any of my fellow boardsies have any tips or advice? Also, can anyone recommend a wheat beer that has the same fruity sweet flavours in the shops? :)

    Well, there's Blue moon (obviously!), but Hoegaarden would be very similar (not as much citrus/coriander seed).

    As for recipes, I'm only starting on my first kit, so have no useful advice, other than I found this document, that lists various attempts to perfect a Blue Moon clone. Might be useful!

    On a side note, I bottled my Coopers wheat kit today. Am I right in saying it's best to drink young? As in a week? Or am I best leaving it the minimum of two?

    I made the beer in this video. Only difference was that I used a Munton's Wheat Beer kit. I think the secret is the Brewferm Blanche yeast. This brew was absolutely gorgeous and if you like Erdinger Blue Moon or Hoegaaerden you should give it a try. Dead simple to make. Enjoy!

    Have done a few brews at this stage and I think I will now start experimenting with modifying kits. I love wheat beers like Erdinger, Paulaner, blue moon etc so this mod is right up my alley.

    In terms of the hops should I use this:

    The first is 12g pellet form in a bag and the second is 100g real hops vacuum packed. Also, I don't understand the instructions on the first. It says "Soak hop bag in a cup of boiling water for 10 minutes. Add mixture including hop bag to your brew before adding yeast." Does that mean I add the bag into the fermentation bin for the entire fermentation? From the youtube video he was sieving them out after the boil.

    Also, any idea where abouts in Dublin I would get the indian version of the coriander seeds, i.e. pointy type, not round?

    Here they seem to think that the smaller European seed has a more intense flavour. Even in the Asian shops around Dublin, I have only ever found the smaller round variety (for cooking), but have never really gone out looking for the Asian equivalent. This is the brand from the video, but it's mainland UK delivery only.

    My next brew is a Red Irish Ale, followed by a Light Honey Beer recipe I read on thehomebrewforum.co.uk.

    Well that's because the coriander in blue moon is all that flavor it has, Hoegaarden an other wits really on phenolic, attenuative yeast strain ans well as a balanced spice additions

    I bottled my coopers wheat kit 5 days ago. I read that Wheat beers are best drunk young? How soon is too soon? Would a cheeky one tomorrow be okay?

    As I understand it,
    Weiss Biers and Wit beers are based on different types of wheat (i.e. the wheat is processed differently). You''ll notice Hoegaaaaarden is a totally different colour to Franzzzissschkaaner. it's not the orange and coriander that completely changes the colour.

    By the way, I saw these in the new Indian Supermarket in the Fonthill Business Park today, if you're still looking. It was a massive bag, but only cost something like €2.50. They described the European ones as 'small coriander seeds'.
