Hello I was going to make some mince pies today and I forgot to pick up eggs. I know you need eggs to brush the top of the pastry but I was wondering if it's a mandatory ingredient? Could you use milk or water? Can you get away with not putting it in?

    Thanks.

I frequently use milk to brush pastry and to stick the lids on.
Its fine. They won't be as glossy but there isn't much difference.
