Cable Modem + Router Question

At the moment I've got the following network setup:

UPC Cable Modem -> (Ethernet Cable) -> Apple Airport Express (broadcasts a wireless network).

I'm not particularly content with the setup as I can't connect via ethernet and can't configure port forwards etc. I also have a Netopia 3347 (iirc). Would it be possible to use this a particular router instead of the Airport? If so, should DHCP Server be enabled or disabled? Do I need a better router?

I have plenty of experience with networks based around a DSL internet connection but I'm a bit stumped as I've only recently moved to UPC.

    All suggestions greatly appreciated!

The Netopia should work, I think with those all you need to do is turn of the DHCP server and it will work,
