Hi, our boiler a Firebird kerosene 70/90 outdoors, never switches off when running even for a couple of hours.
I have this evening turned the thermostat down to lowest setting when running and it did switch off.

Three copper wires with probes on the end are pushed down into opening on top of bolier.

My question is should a boiler switch on and off when running?

We seem to use an awful lot of oil.....

Thanks in advance for any advice.

It maybe undersized, you need to get it serviced, preferably by an Oftec engineer.
