iTunes vs iCloud backup?

Is there any difference/advantages between iTunes and iCloud when backing up an iPhone? Trading in my 3gs in the morning for 4s so want to delete everything off it. Done a back up through iTunes there and it only took a couple of mins whilst iCloud back up seems to be taking forever? I wont bother going through with it if…

Also whats the best way of just wiping the phone of everything once i have the backup complete?
