so I'm considering super-insulating the gaff in the next few weeks and heard recently that with timber-framed houses, you cannot use the wall cavity insulation (the bead yokes), so here's my question - can you do with steel-framed houses?

Yes, technically you can inject bonded beads into a steel framed building.

But why would you want to ??

Check out the U-Value of your existing wall, compared to the same wall with added bead insulation.

My advise,... just do the attic.
