11 stone and looking for advice....

    At 5'9 and 11 stone I'm considered fairly skinny and am doin all and everything to build mass,the following is my timetable and general diet,and changes or advice would be greatly appreciated:
    5:00am up and have a whey protein shake
    7:00am tuna tomato lettuce and red onion sandwich on wholemeal bread
    9:00am coffee
    10:30am chicken and turkey breast sandwich on wholemeal bread then a banana
    12:00 Gym for an hour or hour and a half doing light cardio then all free weights
    1:30 Whey protein shake
    2:30 chicken fillet dinner/steak etc...
    5:00 40 minute ab programme from home
    6:30 light salad or poached eggs
    Evening spent relaxing and bed by 10pm.
    Water drank regularly throughout the day,this is a general diet but is it too much protein?is my timing ok?should I add anything?Sorry my gym session is very vague but I'm happy so far with my programme I just really want my diet to compliment it,thanks in advance....

    Do you go back to bed after your whey shake at 5am and then have your lunch at 7am?

    No the shake is pretty much my breakfast then I go to work and my next break is 7:00 am and I have the sandwich,have never had an appetite first thing in the morning so I find by 7 I can eat a proper feed.

    @ 154 lbs, you need to aim for at least 2800 clean calories. 40% protein, 40% carbs and 20% fats.

    Thats what I don't understand tho,how do I break my food down into percentages?how many calories is a tuna sandwhich or a chicken fillet meal?my problem has always been understanding and getting my diet right
