I have looked through all the treads but cant find a answer to this question .
I want to buy a cheap inca or caddy,
I only want to spent abouy 2k or so.
I need a van that will do good miles per gallon.

THE QUESTION I HAVE IS WHAT ENGINE SHOULD I GO A SEAT "SDI" OR STRAIGHT 1.9D ?
OR IF I GO FOR A CADDY A "TDI" OR STRAIGHT 1.9

The SDI is a normally aspirated diesel (straight)
    The TDI has a turbo.
SDI gets better mileage but the TDI is a lot faster.

That is an extreme understatement! The 1.9 sdi is SLOW. great on juice though, and not as patheticly gutless as the 1.9 straight diesel in berlingos/partners. Or the kangoo.

A tdi inca will still do very good mpg, particularly when not loaded.

There is also the older engined 1.9 which is not direct injection like the SDI

In that price bracket be careful, some of these are starting to rot. Check sills, these rot when they are damaged by jacking them incorrectly.

Also check cross member in front of the rear axle and the 2 rear chassis legs. Esp the RHS where the shock bolts in

The older engine 1.9 is very hard on diesel too and even more sluggish than the sdi.

I don't know if you would say very hard. I drove a mk3 golf for years and even as a young buck managed to get 45 to the gallon

indeed i too can remember driving the crap out of a mk3 golf van and various ventos and i don't see how you could get poor mpgs without driving at max rpm everywhere.
They'll obviously be pushed harder than they'd like if someone is trying to go as quickly as you could go in the same van with a tdi engine but driven normally there's nothing wrong with the economy of the earlier 1.9
