Ireland in Winter

My bf is coming on a 3 week trip to Ireland from the 23rd December - 12th January, and I don't have a clue what we'll be able to do/see at that time of year! I was thinking of trips to Cork, Kerry, Dublin, Galway, Clare and Mayo, but am worried that most of the touristy things will be completely closed. It'll be his first time experiencing Christmas (and Ireland!) so I really want to make it special for him. We're in our early 20s and dependent on trains/buses.
