    if someone has played the course in a competition early in the day are they then allowed to caddy for someone later in the day in the same competition?

    and is it the same for matchplay, i.e if there is a gui matchplay - can someone go out and, for example, putt on some of the greens to see the breaks and then caddy (not play) for one of the matchplay competitors?

    Yes. See Decision 6-4/8 (also 6-4/9 and 7-1b/5)

    Yes. 7-1b/5 applies to a caddy 'practicing' before strokeplay but particularly for matchplay, all players (under rule 7-1a) and caddies have equal opportunity to practice so there really isn't an issue.
