What to do with sunflower seeds

We grew some sunflowers in the garden this year. The petals have now left the flowers and the seeds are showing.

We always feed wild birds in the garden and are wondering what to do with the seeds left on the plants. Do we dry the seeds or do we leave the seeds on the plants.

    Any ideas ?

We used ours last year to feed the bird's in the winter, and keep some for next year, let them dry out.

Might get other ideas in garden section:

We always left the seeds on the head but I know other people that cut the whole head off and put it on the bird table, or take the seeds out and dry them for fat balls or seed feeder
