Heading to the UK in a few weeks for a few days, to avoid the huge data charges on O2 would my factory unlocked Irish iPhone 4 work with a UK SIM?
    Cheers!

Check the correct carrier settings (SMS centre number, APN, etc) with the shop where you buy the UK SIM - the carrier settings may update when you turn on the phone with the new SIM, but it's worth checking that this is the case before you leave the shop...

So should the carrier settings remain as they are now (O2 IRL) or change to the UK carrier? And will they change back to the O2 IRL settings afterwards?

They should change to suit the sim that's in it. When you put the Irish sim back in, they should change back (even if you are still abroad when you do it). That's how it worked for me in Germany earlier this year in any case.

As long as the uk carrier offers the iPhone the the carrier file will change as soon as you insert the sim. If they are an unsupported carrier then you might have to connect to iTunes to update the settings. When you re insert the O2 sim it will change back again

Thanks lads, I'll be going with O2 UK if I decide to do it. There might be wifi where I'm going so may not need to go down that route.
