Receipes for tea-time?

    After years of not really caring what I ate and just snacking on the run (single mum, working f/t) or picking bits off my childs plate, I finally got my epiphany:D. I've had enough of my weight now beginning to affect my health (bad back), never mind my self-esteem...so, with some counselling and positive thinking, I am at last 'in the zone!'.

    So while the eating and the exercise is going really well (no real structure, just eating really healthy and walking more & more and down a stone already), I am a bit stuck for healthy recipes for when I get in from work. Briefly, my son eats his dinner at the childminders during the daytime - I get home at 6, having had a healthy breakfast and lunch. I am tending to cook stir-frys for myself when I get in - full of veg with chicken or rice/noodles etc, and my son will have some in pitta bread for his tea. But I'm getting bored with them...

    Any ideas on healthy, nutritous recipes for tea-time that would fill both me and my son without me having to make a full-on 'dinner' as such???

    An omelette with plenty of veg, divide between the two of ye, with a side salad if you like. Super nutritious, really filling and tasty, and very quick.

    Thanks - I love omelettes but only ever make tomato ones! What else could I put in one?

    Whatever veg you have in the kitchen really. My usual would be some combination of brocolli, spinach, onion, mushrooms, peppers.

    Some of those like the brocolli and mushrooms I would stirfry for a few minutes before adding the egg.

    You could also make a potato omelette (with leftover boiled potatoes).

    As well as salt and pepper I sometimes add some chilli powder.

    And you can always add a little ham, or cheese on top, for extra taste.
