Looking for a hybrid myself and the recmmendations I have got so far are for carrera and giant. During my search i came across this site; http://www.kilgrewscycles.ie/products/bikes/ladies.html for cork which reminded me of your past. The prices also seem to be close to a €100 cheaper than the dublin equivalent. Juts thought i'd pass it on in case it helped! I can't recommend them as have never purchased anything from them.

Victoria Cross Cycles, out near the County Hall, have a great stock of bikes in fairness to them.
Not sure if your 600 is total budget for bike + gear (helmet, shorts, gloves, pump, mini toolkit and saddlebag) or 600 for bike alone.

My advice would be to not buy any hybrid bike with front suspension. It's generally mediocre (at best) at that price range and you should get a better overall bike for your money if you opt for one without suspension.
